Blackberry Crumble Bars

Ingredients:

For the Crust and Crumble:

  • 1 1/2 cups all-purpose flour

  • 1 1/2 cups old-fashioned rolled oats

  • 3/4 cup granulated sugar

  • 1/4 cup brown sugar, packed

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 cup unsalted butter, melted

  • 1 tsp vanilla extract

For the Blueberry Filling:

  • 3 cups frozen blackberries

  • 1/3 cup granulated sugar

  • 2 tbsp cornstarch

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

  2. Make the Crust and Crumble: In a large bowl, combine the flour, rolled oats, granulated sugar, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla extract, and stir until the mixture forms a crumbly texture.

  3. Prepare the Blackberry Filling: In a separate bowl, toss the frozen blackberries with the granulated sugar, cornstarch, lemon juice, and lemon zest. Stir until the blackberries are evenly coated.

  4. Assemble the Bars: Press about two-thirds of the crumble mixture into the bottom of the prepared baking dish, forming an even layer. Pour the blackberry filling over the crust, spreading it evenly. Sprinkle the remaining crumble mixture over the top of the blackberries.

  5. Bake: Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the blackberry filling is bubbly.

  6. Cool and Serve: Allow the bars to cool completely in the baking dish before cutting them into squares. These bars can be enjoyed at room temperature or chilled.
