Fried Green Tomatoes

Ingredients

- 4-5 medium-sized green tomatoes

- 1 cup all-purpose flour

- 2 eggs, beaten

- 1 cup cornmeal

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- Vegetable oil for frying

- Optional: Cajun seasoning or paprika for added flavor

Instructions

1. Prepare the tomatoes. Wash the green tomatoes thoroughly and slice them into about 1/4 inch thick slices.

2. Set up your dredging station. In three separate shallow bowls or plates, place the flour, beaten eggs, and cornmeal. Season the flour and cornmeal with salt, pepper, and any optional seasoning you prefer. Mix well.

3. Dredge the tomatoes. Dip each tomato slice first into the flour, shaking off any excess, then dip into the beaten eggs, and finally coat evenly with the cornmeal mixture. Set aside on a plate.

4. Heat the oil. In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat until hot but not smoking. To test if the oil is ready, drop a small piece of bread or a pinch of cornmeal into the oil. If it sizzles and bubbles, it's ready.5. **Fry the tomatoes:** Carefully place the coated tomato slices into the hot oil in batches, making sure not to overcrowd the skillet. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to carefully flip the tomatoes halfway through cooking.

6. Drain and serve. Once the tomatoes are golden brown and crispy on both sides, transfer them to a plate lined with paper towels to drain excess oil. Serve hot as a side dish or appetizer with your favorite dipping sauce, such as ranch dressing or remoulade.
