Ingredients:
2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 1/2 cups fresh pumpkin puree (or canned if in a pinch)
1 large apple, peeled, cored, and diced (a sweet-tart variety like Honeycrisp or Fuji works well)
2 cups chicken broth
1 cup apple cider (preferably fresh)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
Salt and pepper to taste
1/2 cup coconut milk (or heavy cream for a richer flavor)
Pumpkin seeds and a drizzle of cream or coconut milk for garnish (optional)
Instructions:
