Pumpkin & Apple Cider Soup

Ingredients:

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 1 1/2 cups fresh pumpkin puree (or canned if in a pinch)

  • 1 large apple, peeled, cored, and diced (a sweet-tart variety like Honeycrisp or Fuji works well)

  • 2 cups chicken broth

  • 1 cup apple cider (preferably fresh)

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp allspice

  • Salt and pepper to taste

  • 1/2 cup coconut milk (or heavy cream for a richer flavor)

  • Pumpkin seeds and a drizzle of cream or coconut milk for garnish (optional)

Instructions:
