Greek Lamb Meatballs with Tzatziki Sauce
Ingredients:
For the meatballs:
1 lb ground lamb
1/2 cup breadcrumbs
1/4 cup finely chopped onion
2 cloves garlic, minced
1 egg, lightly beaten
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
Salt and pepper to taste
Olive oil, for frying
For the tzatziki sauce:
1 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove excess moisture
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped fresh dill
Salt and pepper to taste
Instructions:
Prepare the meatballs: In a large mixing bowl, combine the ground lamb, breadcrumbs, onion, garlic, egg, parsley, oregano, cumin, coriander, salt, and pepper. Use your hands to mix until well combined.
Form the meatballs: Take small portions of the mixture and roll them into meatballs, about 1 inch in diameter.
Cook the meatballs: Heat a drizzle of olive oil in a large skillet over medium heat. Add the meatballs in batches, making sure not to overcrowd the pan. Cook for about 8-10 minutes, turning occasionally, until browned on all sides and cooked through. Remove from the skillet and set aside.
Prepare the tzatziki sauce: In a small bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper. Stir until well combined.
Serve: Arrange the cooked meatballs on a serving platter and serve with the tzatziki sauce on the side for dipping. You can also serve them with pita bread, sliced tomatoes, cucumbers, and olives for a complete Greek-inspired meal.
