Black Pearl Oyster Mushroom Stir-Fry

Ingredients:
200g black pearl oyster mushrooms, cleaned and sliced
1 tablespoon Olive Oil
2 cloves garlic, minced
1 small onion, sliced
1 bell pepper, sliced (any color you prefer)
1 carrot, julienned
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1 teaspoon cornstarch (optional, for thickening sauce)
Salt and pepper to taste
Cooked rice or noodles, for serving
Sesame seeds and chopped green onions for garnish (optional)
Instructions:
Prepare the mushrooms: Heat Olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and sliced onion, and sauté until fragrant and onions are translucent, about 2 minutes.
Add the mushrooms: Add the sliced black pearl oyster mushrooms to the skillet and cook, stirring occasionally, until they start to brown and release their moisture, about 5-7 minutes.
Add vegetables: Add the sliced bell pepper and julienned carrot to the skillet. Stir-fry for another 3-4 minutes, or until the vegetables are tender-crisp.
Make the sauce: In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and cornstarch (if using) until well combined. Pour the sauce over the mushrooms and vegetables in the skillet.
Finish cooking: Continue to stir-fry everything together until the sauce thickens slightly and coats the mushrooms and vegetables evenly, about 2-3 minutes. Season with salt and pepper to taste.
Serve: Remove the skillet from heat. Serve the black pearl oyster mushroom stir-fry hot over cooked rice or noodles. Garnish with sesame seeds and chopped green onions if desired.
