Spicy Black-Eyed Pea Dip
Ingredients:
30 ounces of cooked black-eyed peas
1/4 cup olive oil
1/4 cup fresh lemon juice
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
Salt and pepper to taste
1/2 cup chopped onion
1/2 cup chopped fresh cilantro
1/2 cup diced tomatoes
1 jalapeño pepper, finely chopped (seeds removed for less heat if desired)
Tortilla chips or vegetable sticks for serving
Instructions:
In a food processor, combine the black-eyed peas, olive oil, lemon juice, minced garlic, cumin, smoked paprika, cayenne pepper, salt, and pepper. Blend until smooth, scraping down the sides as needed.
Taste the dip and adjust the seasoning if necessary. If you want it spicier, you can add more cayenne pepper.
Transfer the blended mixture to a serving bowl.
Stir in the chopped red onion, fresh cilantro, diced tomatoes, and finely chopped jalapeño pepper. Mix well to combine.
Cover the bowl and refrigerate the dip for at least 1-2 hours to allow the flavors to meld.
Before serving, give the dip a final stir and adjust the seasoning if needed.
