Ingredients:
30 ounces of cooked black-eyed peas
1/4 cup olive oil
1/4 cup fresh lemon juice
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
Salt and pepper to taste
1/2 cup chopped onion
1/2 cup chopped fresh cilantro
1/2 cup diced tomatoes
1 jalapeño pepper, finely chopped (seeds removed for less heat if desired)

Instructions:
In a food processor, combine the black-eyed peas, olive oil, lemon juice, minced garlic, cumin, smoked paprika, cayenne pepper, salt, and pepper. Blend until smooth, scraping down the sides as needed.
