Blackberry Cobbler

Who doesn’t love a great cobbler?

Try this mouth-watering treat with some homemade whipped cream and enjoy!

Ingredients:

  • 4 cups fresh blackberries

  • 1 cup granulated sugar, divided

  • 1 tablespoon lemon juice

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, melted

  • 1/2 cup milk

  • 1/2 teaspoon vanilla extract

  • Whipped cream or vanilla ice cream (optional, for serving)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, combine the blackberries, 3/4 cup of granulated sugar, and lemon juice. Gently toss to coat the berries evenly. Let the mixture sit for about 15 minutes to allow the berries to release their juices.

  3. In a separate bowl, whisk together the flour, remaining 1/4 cup of granulated sugar, baking powder, and salt.

  4. Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined, making a thick batter.

  5. Pour the batter into a greased 9x9-inch baking dish.

  6. Spoon the blackberry mixture evenly over the batter. Try to distribute the berries and their juice as evenly as possible.

  7. Place the baking dish in the preheated oven and bake for about 45 minutes or until the cobbler topping is golden brown and the berries are bubbling.

  8. Remove the cobbler from the oven and let it cool for a few minutes before serving.

  9. Serve the blackberry cobbler warm, with whipped cream or vanilla ice cream if desired.
